Meet Francesco Todisco, our Head chef

Franco was born and raised in Italy at the foot of mount Vesuvio. He spent his younger life learning the art of pizzaiolo "Growing up in Pompeii with its traditions and origins of Napolese pizza had a big impact on my life". 

"Being passionate about the ingredients and where they come from is really the essence of italian cuisine. When i came to England i wanted to bring that  passion and use of quality ingredients with me"

Fast track to today and you'll find Franco's maintained his links to his home-lands traditions and use of quality ingredients.

"Our Italian supplier and friend Michele grew up 45 minutes from where i did, the Fior di latte cheese he supplies to us is from a farm i know in ponte corvo, a beautiful place with beautiful cheese!
